There are hosts who are dietitians who may be familiar with celiac disease but there are also many hosts who are unfamiliar with celiac disease or non-celiac gluten sensitivity.
Especially with gluten sensitivity, writing out whether you are just not okay with eating wheat, rye, barley, oats in its pure form but fine with gluten in products such as vinegar and soy sauce is very much recommended.
The reality is that gluten free products are not as readily available in Japan as compared to wheat free products so the more specific you are, the easier it is for hosts to figure out whether or not they will be able to provide a safe and enjoyable meal.
